Instructions
Step 1
Start by whisking to combine your butter, milk, eggs, and pineapple cake mix. Set aside.
Step 2
Combine the melted butter and brown sugar to create the caramel layer. Scoop 1/2 tbsp into parchment-lined cupcake pan and push a piece of pineapple into the bottom. Fill with the batter and bake at 350f for 15-18min.
Step 3
While it cools down, combine the pasteurized egg whites, sugar, coconut extract, and salt. Whisk on high until sugar has dissolved in the mixture. Add your room temperature butter and continue whisking until the buttercream comes together and is smooth.
Step 4
Scoop 2 tbsp of the frosting onto the cupcake and spread it. Then dip the frosting into the shredded coconuts and top with the maraschino cherries! Enjoy!
