Instructions

Step 1
In a bowl, add water, olive oil, dry yeast, sugar and whisk everything together.
Step 2
Incorporate flour little by little, add salt and knead for about 8/10 mins.
Step 3
Cover with a clean towel and proof for at least 30 mins (if you have time, I suggest letting it proof up to 1 hour).
Step 4
Now roll out your dough and cut it into 32 squares.
Step 5
Flatten each square with your hands, add 1 tablespoon of grated mozzarella in the centre and close your dough into a little ball, making sure your seal the edges.
Step 6
Line a baking tray with parchment paper and whisk an egg.
Step 7
Place your dough balls on your baking tray to form a tree, spread some of your egg wash on top and bake in the oven for 20-25 mins (180C/360F).
Step 8
Serve with some freshly chopped parsley and grated Parmigiano on top.
