Instructions
Step 1
Preheat oven to 180°C. Spray a baking tray with oil then line with baking paper (oil stops paper from slipping and helps it stick)
Step 2
Mix all base ingredients together in a bowl until a dough is formed. Press into lines baking sheer and bake for 15 to 20 minutes, or until light golden.
Step 3
Mix all filling ingredients in a small saucepan and cook for 8-10 mins constantly whisking until thick and golden brown . Pour mixture over the cooled base. Bake for 12 minutes or until firm and lightly brown. Leave in the fridge for 1 hour or until set
Step 4
Melt chocolate and copha in a double boiler (heatproof bowl set over a saucepan with simmering water, don’t let the water touch the bowl) and pour over cooled filling. Let cool and set completely in the fridge, 1-2 hours, before serving
