Instructions
Step 1
Boil the eggs: Bring a large pot of water to a boil. Carefully lower the eggs into the boiling water with a slotted spoon (the eggs should be totally covered by the water) and set a timer for exactly 6 minutes and 50 seconds, stirring slowly for the first 1½ minutes to distribute the heat evenly. Meanwhile, fill a large bowl with cold water and plenty of ice to make an ice bath. When the timer goes off, scoop the eggs into the ice bath.
Step 2
Make the marinade: In a medium bowl, whisk together the water and sugar until the sugar dissolves, then whisk in the sherry vinegar and soy sauce.
Step 3
Peel: Once the eggs are cool and the water isn’t too icy for your hands, crack the eggs all over and peel them underwater.
Step 4
Marinate: Put your peeled eggs in the soy sauce mixture and marinate in the fridge for at least 2 hours or up to 6 hours, making sure they’re completely submerged. If they’re not covered with liquid, try a smaller, deeper bowl or set a small plate on top of the eggs to weigh them down. The longer they marinate, the more intense they’ll get.
