I double or quadruple this recipe and use a mini muffin pan (24) and regular muffin pan (4). This allows a healthier portion with the mini muffins, and I can share or freeze some for later.

Instructions
Step 1
Preheat oven to 350 degrees. Mix banana, egg, vanilla, sugar and oil in a small bowl (blender). When well mixed, add peanut butter.
Step 2
In a separate larger bowl, combine flour, baking powder, baking soda and salt.
Step 3
Make a well in the center of the flour mixture. Pour in wet ingredients and mix until just combined. Fold in chocolate chips.
Step 4
Fill greased muffin tins about 3/4 full and bake 20-25 minutes. Makes 6-8 regular sized, or about 18 mini muffins.
