Instructions
Step 1
Prepare the braai with coals on either side for indirect cooking.
Step 2
Score the picanha's fat and coat with oil, salt and pepper.
Step 3
Grill the picanha fat side down over hot coals for a minute or 2. Then cook with indirect heat for 3.3 minutes per 100g.
Step 4
Leave to rest for 10 mins then slice thinly.
