Ingredients

550gColiban Potato
Large, thinly sliced
1Cans Cream Of Mushroom Condensed Soup

146gOnion
Small, diced

6gGarlic
crushed

20gOlive Oil
100gFat Cheddar
Reduced, grated

2gShallot
slice the green tips

125gSkim Milk
Instructions
Step 1
Preheat the oven to 180C.
Step 2
In a saucepan, briefly sauté the onion and garlic in some olive oil.
Step 3
Add the tin of soup and milk, stir to combine without boiling. Set aside.
Step 4
Layer the chopped potatoes in the bottom of a baking dish.
Step 5
Evenly pour the soup mixture over the potatoes and cover the dish with foil.
Step 6
Bake covered for 60 mins.
Step 7
Remove the dish from the oven after 60 mins and sprinkle the cheese and the green tips of the shallots over the top. Leave uncovered and bake for a further 15 mins to brown the top.
