Moist and yummy! Can be adapted to GF by substituting rice flour! Yummy!

Step 1
Mix all ingredients well.
Step 2
Pour into muffin tins.
Step 3
Sprinkle granulated sugar on top of each muffin.
Step 4
Bake at 350° F for 10-12 minutes, or until toothpick in center comes out clean.
Substitution:
Step 5
Instead of fresh sweet potato you can use an 8 ounce jar of Sweet Potato baby cereal.
