Preheat oven to 425°f

In a large bowl, add the measured flour

Add baking powder, salt and baking soda, mix.

Add the cold cubed butter and crumble with hands until it looks like breadcrumbs

Add cold buttermilk, mix just until combined

Do not overmix and do not knead

Transfer dough to a floured surface, flour rolling pin and roll to about 1 inch thick

Fold the dough and roll (repeat two times)

Flour biscuits cutter or any cutting tool, you can use a glass cup or cookie cutter

Cut and transfer to a baking pan

Smoosh together the leftover cut up dough, roll and cut. Repeat until dough is finished.

Bake in a preheated oven at 425°F/ 220°c for 15 minutes

Nice and puffy, just the right balance of leavener and buttermilk. I used whole wheat flour which made them slightly dry, which was easily overcome by slathering them in fresh-churned butter and homemade molasses. Some of us liked honey for a topper.
