Instructions

Step 1
Preheat the oven Fan 180 deg C
Step 2
Grease a 6” pie dish
Step 3
Line the pie dish with the pastry. Make sure the pastry is 2-3mm thick.
Step 4
Bake the pastry blind for 10 mins
Step 5
Spoon the chocolate spread onto the pastry
Step 6
Whisk up the rest of the ingredients (except the pumpkin seeds) with an electric whisk for at least 3 mins.
Step 7
Spoon the sponge mixture onto the chocolate lined pastry. Sprinkle with the pumpkin seeds
Step 8
Bake in the over for 45 -50 mins on 180 deg C Fan. Cover half way through if it’s browning too quickly.
Step 9
Check the sponge to see if it cooked in the usual way. The sponge will need baking for longer than usual because of the coconut.
