For the Sponge
2Granny Smith apples
large, firm, peeled, cored, and grated
3.5 ozcarrots
peeled & grated
1 ¾ cupswhole wheat flour
½ cupgranulated sugar
2 tspbaking powder
1 ½ tspground cinnamon
1 ½ tspground ginger
¼ tspsalt
3 Tbshoney
3 Tbsmaple syrup

Step 1
Heat the oven to 350F.

Step 2
Put all the sponge ingredients in a large bowl. Using a wooden spoon, beat them together to make a soft batter. Pour the mixture into the prepared pan and bake for 1 hour, until golden brown, risen, and a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Step 3
To make the decoration, using an electric hand mixer, beat the butter in a bowl until really soft. Add the confectioners' sugar and beat on low speed until combined and smooth. Add the cream and beat again for about 4 minutes, until thickened, then add the cream cheese and beat again, briefly, until thick and creamy.
Step 4
Spread the frosting over the top and sides of the cake and sprinkle the walnuts on top. Finally, dust lightly with the pinch of cinnamon.
