For the Pasta
1 lbConchiglie pasta
shells
1 lbground lamb
4 cupschicken stock
3 Tbspolive oil
2onions
finely chopped
1 tsppaprika
1 tspcumin
1 Tbsptomato paste
1 tspsalt
1 tsppepper
2bay leaves

For the Red Butter
½ cupbutter
½ tspred pepper flakes
2 Tbspolive oil
2 Tbsptomato paste
½ tspDry dill
½ tspdry oregano
½ tspDry parsley
For the Cheese
Instructions
Step 1
1. Make the pasta – add the olive oil to a large soup pot and heat on medium. Add the onions and cook for 10 minutes until golden brown. Add in the paprika and cumin and stir for 2 minutes. Add the tomato paste and stir.
Step 2
2. Add the lamb to the pot and stir and separate, breaking down the lamb to small bits. Cook this for about ten minutes or until the lamb is cooked all the way through. Add the salt and pepper and turn the heat up to medium high. Pour in the pasta shells and stir to combine. Add the chicken stock and bay leaves. Heat to boiling, then cover, turn the heat down and simmer for 12 minutes.
Step 3
3. In a small pan, add the butter and cook on medium low until it melts. Add the olive oil and heat for 2 to 3 minutes. Add in the tomato paste and additional herbs. Stir repeatedly with a whisk.
Step 4
4. In a small bowl, combine the yogurt and herbs and stir well.
Step 5
5. In a small bowl, combine the shredded parmesan cheese and herbs.
Step 6
6. Remove the pasta from the heat and stir – remove the bay leaves. Add the pasta to the bowl, then top with yogurt, cheese and red butter.
