Instructions

Step 1
Add pancetta in a low skillet heat, cook slowly, frequently stirring.
Step 2
Add shallot, and sautee for about 2 minutes.
Step 3
Add rice, and sautee for about 2 minutes, then add wine.
Step 4
Add pepper, chicken stock, and boil. Low heat, simmer until rice absorbs the chicken stock for about 20 minutes.
Step 5
Add parmesan cheese, mix well, then remove from the heat.
Step 6
Combine water and egg yolks in a small bowl. Pour it into the risotto and mix well.
Step 7
Serve with chopped parsley.
