Tip: 1/2 cook for about 12 minutes then place n airtight container in fridge the next day finish cooking for 12 minutes
Tip use 50g cream for 1 egg to make different amounts
Tip do not bring out pastry until everything else is prepared and ready to fill cases. Use small pie tray

Step 1
Whisk eggs and cream together
chop bacon and cook
chop shallots finely'
cut out puff pstry circles and place in tray
place bacon and shallots in bottom of shell
pur cream mixture over
sprinkle with grated cheese
Cook in 180 degree oven for about 12 minutes(1/2 the time) Finish cooking the next day.
