Step 1
Heat oil in a heavy saucepan and sauté leeks until translucent, about 5 minutes.

Add spinach and sauté until spinach has wilted.

Add dill and tomato paste diluted in the 2 ½ cups water. Bring to a boil and add the rice

Step 4
Stir, cover and simmer for 20 minutes until the rice is done and liquid is absorbed.
Step 5
Add salt and pepper to taste. Garnish with lemon wedges before serving
