Instructions

Step 1
Preheat oven to 350F and line with silicone liners or foil liners sprayed with nonstick spray. If you are not using liners, spray your pan with nonstick spray
Step 2
Mix the pumpkin with the next 5 ingredients: sugar, brown sugar, egg beaters, vanilla,and evaporated milk
Step 3
Combine flour with the next 4 ingredients: pumpkin pie spice, salt, baking powder, and baking soda.
Step 4
Add flour mixture to pumpkin mixture and mix until well blended and smooth
Step 5
Fill each muffin cup 2/3 full. Bake 20 minutes and let cool 20 minutes.
Step 6
Remove cupcakes from pan and chill in fridge for 30 mins. Top with Cool Whip.
