Wild Garlic and Hard Cheese Breakfast Muffins

I am a huge fan of wild garlic (ramsons). This recipe is from Momčilo Antonijević’s book Wild Chef, and the wild garlic gives the muffins an aromatic taste you don’t get from many greens.

Instructions

Step 1
Mix the flour with baking powder and salt.
Step 2
Whisk eggs, add yoghurt and oil.
Step 3
Combine liquid and dry ingredients, add ajvar, finely chopped parsley and cheese.
Step 4
Put into muffin baking tray and bake in a pre-heated oven on 200 degrees celsius for half an hour.
