Step 1
In a medium bowl, combine sugar, oil, butter and eggs one at a time. Mix for 2 minutes. Stir in molasses. In a separate bowl mix flour, cinnamon, ginger, baking soda and salt. Gradually adding to wet ingredients to combine.
Step 2
Put 1/2 cup sugar in a bowl. Shape though into balls using a tablespoon and roll into sugar. Bake at 350° for 9 to 11 minutes. Cool completely.
Step 3
Melt three bags of white vanilla chips, or classic chips in the microwave (Go slow stirring every 30 seconds.) Add shortening and start until smooth. Pour melted chocolate into a small bowl. Dip cookies into vanilla, chocolate and cool on brown parchment paper.
