Instructions

Step 1
Preheat oven to 145°C fan

Prepare tin with butter and parchment paper

Sieve flour into bowl and add baking powder with a pinch of salt

Separate 3 eggs, place the whites in mixer bowl and the yolks into separate bowl

Crack remaining 5 whole into mixer bowl

Turn on mixer on high

Add sugar slowly to mixer bowl and once eggs all mixed

Continue on high speed till fully mixed

Lower mixer speed

Add oil, orange zest and vanilla extract to mixer bowl

Slowly increase mixer speed and scrape sides with spatula

Once all mixed stop the mixer

Add flower bowl through sieve and whisk in 1 direction gently and thoroughly

Pour in tin and place in oven for 40 mins

Repeat twice to get 2 sponges

For syrup:

Place water in pan over medium heat

Add 3-6 tablespoons of sugar

Cook till a bit thick

For custard:

Whisk the cold milk, the 3 egg yolks and 3 tablespoons of plain flour in a pan over low heat

Add sugar and keep whisking till fully mixed

Add butter and 1 teaspoon of vanilla extract

Keep whisking until thick then place cling film over and allow to cool

For whipped cream:

Pour all cream in mixer bowl

Add icing sugar

Increase speed slowly from slow to medium-high

Stop straight away after it's light and fluffy

Place in fridge

Once both sponges removed from oven and left to cool

Flip cake upside down

Poke holes in cake add syrup with a brush

Add custard with a spatula then coconut and kit kat powder then strawberries

Cover top with cream and smooth over with spatula

Add the other flipped cake on top

Place in fridge for as long as possible (24 hours ideally)

Once set, take out of fridge and spread over the top sponge with whipped cream

Add any fruit/chocolate for toppings
