Pasta Carbonara
This is more of a technique than a recipe. There’s no rules. Use as much as you want for each ingredient depending on what you like. If you can't find pancetta, use prosciutto. No prosciutto, then bacon. If you can't find pecorino, use parmesan.

Instructions
Step 1
Chop and cook pancetta in a frying pan, then drain grease from pan. Turn off heat.
Step 2
Boil noodles until they’re al dente. Then drain, and add to pan with bacon.
Step 3
Discard egg whites, and add the yolks to a bowl. Add cream, whisk.
Step 4
Add a couple big pinches of grated cheese to the pan with pancetta and noodles.
Step 5
Turn on pan to LOW LOW heat and add eggs to pan with noodles and pancetta, and stir quickly. BE CAREFUL that the pan isn’t too hot. You don’t want scrambled eggs.
Step 6
Top with the rest of the grated cheese, serve.
