Instructions
Step 1
In a mixer’s bowl add the grated tomatoes, tomato paste, sugar, and eggs, and whisk them well. Add the yeast and whisk until it is dissolved
Step 2
Add the olive oil, oregano, flour, and salt, and beat them with the hook attachment at medium speed, for 7-8 minutes, until you have a smooth dough. The dough will be quite sticky
Step 3
Transfer the dough to a floured bowl, cover it with plastic wrap, and allow about 60 minutes for the dough to double in volume.
Step 4
Add the feta cheese to the dough, crumbled into small pieces, and knead well until the feta is incorporated into the dough.
Step 5
Spread a little olive oil in a 10x35 cm loaf tin, dust it with flour, and set it aside
Step 6
Transfer the dough to the loaf tin and cover it with a tea towel or some plastic wrap. Allow 30 minutes for the dough to rise again.
Step 7
Bake the bread for 60 minutes.
You can devide dough in two smaller loafs and bake for 50 min
Step 8
Allow it to cool and serve
