Hot Chocolate with Homemade Marshmallows!

Making homemade marshmallow is really fast and easy. It's really soft, and the best way to enjoy marshmallow is by making it home along with making your own hot chocolate.

Instructions
Step 1
To make the Marshmallow
Step 2
In a bowl add the gelatin, cold water and mix well. Let the gelatin bloom until you're ready to use it.
Step 3
It’s best to make preparations to set the marshmallow first before starting the next process. Decide how you would like to set the marshmallow. If you want to pipe the marshmallow to make it look like the store bought, then on a clean surface dust corn starch so you can pipe the marshmallow on it. My recommendation is to set it on a tray, then cut it into cubes, it’s more simple and easy. Lightly spray or oil a 8 inch square baking tray, then dust it with corn starch well (leave no gap).
Step 4
In a saucepan, add the sugar, corn syrup, water, and mix it once(don’t mix or touch it after this). Bring the sugar syrup into a boil, then simmer the syrup on medium heat until the temperature comes to 240°F.
Step 5
If you mix with a hand mixer then use a large heat resistant bowl, then add the gelatin and start the mixture on low speed and carefully pour sugar syrup on the side. When the syrup turns slightly foamy then gradually increase the speed to medium and whip for 5 minutes then increase to high speed. Continue to whip the mixture until it becomes very thick (the whipping process takes up to 10-15 minutes). When you see that mixture is able to hold its shape then it’s ready.
Step 6
If you’re using a baking tray, pour the mixture on the dusted tray, and evenly spread it with an oiled hand or a spatula. If you decide to pipe it then, you have to work quickly because the marshmallow sets very fast. Place the marshmallow mixture in a large piping bag, cut the tip of the piping bag as small or big you like based on your desired marshmallow size. Start piping the marshmallow into a lengthwise (long pipe shape) on the dusted surface.
Step 7
Let the marshmallow sit in the refrigerator to set it faster. The baking tray process would take slightly longer like 2-3 hours, and the piping marshmallow would take 1 hour or less to set.
Step 8
When the marshmallows are set, dust the surface with more corn starch, then cut them into whatever size you like. When you finish cutting the marshmallow, with both hands, coat them well with corn start on the surface to make sure they don't stick to each other. Place the marshmallow in a large strainer and shake off the excess corn starch. You can store them for up to a month in a dry jar or a bag.

To make the hot chocolate

In a saucepan, place all the ingredients except chocolate and cinnamon powder. Let the mixture come to a boil then simmer for 5-7 minutes.
Step 11
Chop the chocolate roughly, and place in the hot chocolate mixture. Whisk everything and simmer it for another 5 minutes until the chocolate melts and the mixture is smooth.
Step 12
Take out all cinnamon sticks and other large spices. Serve it in a cup with a pinch of paprika on top then place the marshmallow. To finish up, dust some cinnamon powder, and enjoy!
