If ever there is a time to enjoy childhood sweets as an adult, it's Christmas. Although this Christmas Jewel Bark has a slightly more mature taste then your standard colourful candy.
Studded with chewy, sweet and sour fruits, this creamy white chocolate bark is the perfect thing to snack on as you sit by the fire (or the air-con if you enjoy Christmas in the Southern Hemisphere like myself).

Instructions
Step 1
Melt the coconut butter and cacao butter in a bowl sitting over a pot of gently simmering water.
Step 2
Remove from the heat and stir in the stevia and vanilla. Leave to cool slightly for 10 minutes.
Step 3
Line a brownie tin with baking paper and pour in the mixture.
Step 4
Sprinkle over the goji berries, pistachios and inca berries and place in the fridge or freezer to set for about 1 hour.
Step 5
Remove from the fridge and use a large knife to cut into shards.
