Instructions
Step 1
Following the instructions from the cake mix box of your choice, mix dry and wet ingredients. We used the Trader Joe’s yellow box mix, and baked at 325° for 45 min. Bake in a loaf pan, not in an 9x13 pan.

Step 2
Once it’s ready (poke with a toothpick to ensure it’s baked through) let cool for at least 30 minutes.
Step 3
Once cool, lay the cake on its side and cut horizontally into 3 pieces.
Step 4
In the loaf pan, use parchment paper to line the pan. Place the first 1/3rd of cake as the base. Scoop 1/2 of the pint of blueberry cheesecake ice cream and spread evenly. Then add the second cake layer. Add the rest of the icecream. Place the last layer of cake on top.
Step 5
Freeze overnight, or at least 6 hours.
Step 6
Remove cake from the pan. Spread the cool whip on the top of the cake, then add your berries and mint! Serve immediately
