Instructions
Step 1
boil the fruit puree over low to medium heat with 30g of sugar
Step 2
turn off the heat when the fruit puree starts to boil
Step 3
add the tapioca starch and stir
Step 4
turn it on over low heat again and knead the dough
Step 5
knead the dough until it thickens
Step 6
take out the dough and knead until smooth
Step 7
add more tapioca starch if needed until desired consistency
Step 8
roll out the dough into pea-sized balls, the dough doubles in size as it boils
Step 9
coat the balls in starch
Step 10
sift off the excess starch
Step 11
store in the freezer or cook
