Cherry, Coffee, and Milk Chocolate Mousse with European Liqueur
Note: The addition of European Liqueur will enhance the flavor of the dessert and give it a unique twist. Adjust the quantity to your taste and make sure to use a liqueur that pairs well with cherry and chocolate.

Instructions
Step 1
In a saucepan, combine the cherries, coffee, sugar, vanilla extract, and European Liqueur. Cook over medium heat, stirring occasionally, until the cherries are soft and the liquid has thickened, about 15 minutes. Remove from heat and let cool.
Step 2
In a separate bowl, whisk the egg yolks until light and fluffy. Slowly pour in the cooled cherry mixture, stirring constantly.
Step 3
In a large bowl, beat the heavy cream until stiff peaks form.
Step 4
Gently fold the egg yolk mixture into the whipped cream.
Step 5
Melt the milk chocolate in a double boiler or in the microwave. Once melted, fold the chocolate into the mousse mixture.
Step 6
Pour the mousse into individual serving dishes and refrigerate for at least 2 hours, or until set.
Step 7
Serve chilled and garnish with additional fresh cherries and grated milk chocolate if desired.
