Instructions
Step 1
Cut watermelon into chunks, then puree in a food processor. Pass it through a sieve.
Step 2
In a small bowl combine 50ml watermelon juice and 10g gelatin. Place in fridge for 10 minutes or until spongy
Step 3
In a saucepan combine 200ml watermelon juice and sugar. Bring it to a boil, then remove from heat and stir in gelatin. Mix well until gelatin dissolves and set aside.
Step 4
In a large bowl start whisking double cream until you get a texture like melted ice cream. Don't overwhip, once you see the cream start to thicken, stop.
Step 5
Slowly add the watermelon-gelatine mixture to the whipped cream constantly stirring.
Step 6
Pour the mousse into the ice cream mould and insert the wooden stick. Freeze for 3-4 hours or until firm.
Step 7
For the chocolate glaze, break the chocolate into small pieces, transfer to the bowl, and melt it in the microwave in 10-second pulses. Add the sunflower oil, colour (if desired) and mix until combined.
Step 8
Remove the mousse from the mould and dip it into chocolate. Decorate with the remaining chocolate on top if desired and put in the fridge to defrost for 2 hours.
