Instructions
Step 1
Preheat oven to 375 F and butter standard muffin tins.
Step 2
In a bowl combine and stir the flour, bran, baking soda, and salt.
Step 3
In another bowl, cream together the banana and butter. It is okay if the mixture looks curdled. Add the sugar, egg, and mix until thoroughly combined.
Step 4
Combine the flour mixture into the banana mixture. Fold in chocolate chips.
Step 5
Spoon batter into prepared muffin tins, about 3/4 full. Bake for 15-20 minutes, or until a toothpick comes out clean. Let cool in the pan for 5 minutes, then remove and place on cooling rack.
