Instructions

Step 1
Place a rack in center of oven, preheat to 350⁰. Cover cookie sheets with parchment paper.
Step 2
In food processor, pulse the almonds to a fine powder (don't grind to a paste).
Step 3
In large bowl crumble the almond paste into small pieces. Add sugar and egg whites. Using electric mixer on low, beat until blended. Increase speed to medium, beat, stopping often to scrape down the sides of the bowl, until smooth. Add the ground almonds, beat on low until blended.
Step 4
Scoop mixture with spoon (you can make them as large or small as you want) onto parchment lined cookie sheet.
Step 5
Place pine nuts on the cookies covering the entire top before placing in oven.
Step 6
Bake about 15 minutes until lightly browned.
