Berry crumble in a mug
Satisfy those sweet cravings with a quick berry crumble, made in a mug. I love the flavours of mixed red berries in this crumble, and I always have some in the freezer for crumble emergencies. Serve topped with a spoonful of thick coconut yogurt.
EASY TIP If you don’t have dairy-free digestive biscuits available, dairy-free ginger biscuits or oat biscuits are also delicious in this crumble topping.

Step 1
1 Spoon the frozen berries, caster sugar and lemon juice into a large, microwave-safe mug. Cover with cling film (plastic wrap) and pierce the top. Cook in a 800w microwave for 1 minute 30 seconds, then remove and stir. Drain away any excess liquid.
Step 2
2 In a small bowl, combine the brown sugar, crushed digestive biscuit and oats. Rub in the vegan butter to create a crumbly texture.
Step 3
3 Spoon the topping over the cooked fruit, then cook again in microwave for 1 minute. Allow to cool for a few minutes before enjoying.
