Instructions

Step 1
1. Preheat the oven to 350. Grease a 9x13-inch baking pan with butter. 2. In a large bowl, whisk the cornstarch into the heavy cream until smooth 3. Add 1 1/2 cups of the cheddar, the creamed corn, corn kernels, jalapeños, melted butter, eggs, and 1/2 tsp salt. Stir well. 4. Pour the pudding into the baking pan and top with the remaining 1/2 cup cheddar. Bake until just set, 45 to 50 minutes 5. Fire up the broiler and broil until the top is browned (1-2 min).
