Instructions
Step 1
Cream cheese filling
Beat 4 oz cream cheese, 2 tbsp powdered monk fruit, 1/2 egg and 1/2 tsp vanilla together until smooth.
Step 2
Cookie assemble:
Preheat oven to 350°. Beat together 1/4 cup butter, cream 1 oz cream cheese and 1/2 cup monk fruit sugar until it's fluffy and light and color

Beat in 1 tsp vanilla extract and remaining egg

Add 2 & 1/2 cup almond, flour 1/2 cup at a time. The dough will be dense in a little crumbly, but shouldn't stick when pressed together.
Step 5
Use a medium scoop to scoop balls of dough onto a prepared cookie sheet. Use the back of a round teaspoon measuring spoon to press on the center of each dough ball to create a large well in the center of the cookie. Flattening in the process. If any large cracks form on the sides press them back together
Step 6
Use a small spoon to dollop the cream cheese mixture into each well, filling almost but not quite full
Step 7
Use a spoon to dollop smaller amounts of the jam onto the cream cheese filling on each cookie. Use a toothpick to swirl jam into cream cheese
Step 8
Bake for about 10 to 12 minutes, until the edges are golden and the filling is barely set. Allowed to cool completely in the pan before handling. Cookies will harden as they cool
