Ingredients

4slices bacon
diced
1 Tbsbutter
1yellow onion
small, diced
3cloves garlic
minced
4 cupslow sodium chicken broth
optional 2 cups more
½ tspgarlic powder
½ tsponion powder
½ tspdried chives
½ tspdried dill weed
1bay leaf
4 cupschicken
shredded
8 ozcream cheese
softened
1 cupshredded cheddar
4 cupbaby spinach
¼ cupheavy cream
green scallions
Sliced, garnish
salt
to taste
pepper
to taste
Instructions
Step 1
Cook diced bacon to a crisp in Dutch oven or soup pot
Step 2
Remove bacon and melt butter over medium high heat
Step 3
Stir in onions and cook for 3 min
Step 4
Stir in garlic and cook for 20 seconds
Step 5
Add chicken broth and scrape up all browned bits from bottom of the pot
Step 6
Season with garlic powder, onion powder, dill weed, chives, salt and pepper.
Step 7
Add bay leaf and bring to boil; lower heat to medium low and cook 5 min
Step 8
Add cream cheese and whisk until melted and combined
Step 9
Stir in shredded cheese and whisk until melted and combined
Step 10
Add baby spinach and cook for 2 minutes
Step 11
Stir in heavy cream and cook for 1 minute
Step 12
Taste test for seasonings, remove bay leaf, remove soup from heat
Step 13
Top with scallions and bacon
