Step 1
1. Place potatoes in a microwave for bold dish and microwave at high until potatoes are almost tender, about 2 minutes

2. Place bacon it in a large skillet. Cook over medium high heat until bacon begins to brown, 5 to 6 minutes

3. Add shallots and potatoes to the skillet, reduce heat to medium and cook, stirring occasionally, until bacon is done and potatoes are soft and beginning to brown, 3 to 4 minutes

4. Transfer mixture to a bowl, cover to keep warm

5. Whisk together eggs, water and salt in a medium bowl until well combined. Add egg mixture to skillet, cook stirring constantly until eggs are almost set, one to two minutes
Step 6
6. Stir together mayonnaise and siracha and a small bowl. Spread sauce evenly over tortillas
Step 7
7. Layer potato mixture, scrambled eggs and arugula evenly in the center of the tortilla and fold burrito style
