Instructions
Step 1
1. Peel, core, and chop or slice apples
Step 2
2. In a small bowl, mix together the chia seeds and lemon juice. Set aside.
Step 3
3. Stir in apples, date paste (or other sweetener), spice, and vanilla.
Step 4
4. Add chia seed/lemon juice mixture to the apples and mix well.
Step 5
5. Cover and cook stirring occasionally for 4-6 minutes or until very slightly softened
Step 6
6. Add chia seed and lemon to the pan while stirring and continue to cook until apples are soft (not mushy) and the filling is thickened
Step 7
6. Pour evenly over the crust. Sprinkle with coconut (optional).
Step 8
7. Bake at 350 degrees for 50 -55 minutes

8. Delicious served hot, warm, cold, or at room temperature
