Instructions

Step 1
With a hand mixer, beat together the cool whip and pudding mix. This will be stiff.
Step 2
Line a sheet pan with parchment paper and spread evenly the cool whip mixture.
Step 3
If it’s too hard to spread the cool whip I like to spray a spatula with nonstick spray and use the back to press it down.
Step 4
Freeze for 20 minutes
Step 5
Lift the parchment paper out of the sheet pan on to a cutting board and with a sharp knife cut into bars.
Step 6
Melt the chocolate either in the microwave or with a double boiler.
Step 7
Lay out a piece of wax paper or plastic wrap, or a cooling rack for the bars.
Step 8
Working quickly, coat the cool whip bars in the chocolate and remove to the wax paper or cooling rack to set.
Step 9
I find using 2 forks to lift the bars out of the melted chocolate and scraping off the excess works great.
Step 10
Let the bars set and enjoy. Refrigerate leftovers.
