For the marinate
Instructions
Step 1
Cut pork belly/pork shoulder into 4 cm across pieces, and place them in a mixing bowl.
Step 2
Dice some garlic and ginger, and finely slice some green onion.
Step 3
Add diced ginger, garlic, scallion, chicken powder, Sichuan Peppercorn powder, soy sauce, oyster sauce, sugar and cooking Wine in sliced pork. Mix well and leave to marinate for about 20-30 minutes.
Step 4
Place sweet potato starch and flour in a mixing bowl, add eggs and beer, whisk until soft and smooth.
Step 5
Pour the batter onto the marinated pork, mix well for even coating and let sit for another 30 minutes.
Step 6
Heat up 2 litre of cooking oil in a pot over on high heat and then adjust the heat to medium once it gets hot.
Step 7
Place marinated pork one piece at a time into hot oil to keep them from sticking.
Step 8
Deep fry for 5 minutes until golden brown-ish, remove them from the pot – do this in small batches; Repeat this process until them turn completely golden brown and crispy.
Step 9
Remove from wok and drain, serve warm.
