Pork Griot
3 lbpork shoulder
cubed
1yellow onion
chopped
2shallots
chopped
6garlic cloves
1red bell pepper
chopped
1scotch bonnet pepper
sliced
8scallions
chopped
thyme
parsley
2oranges
juiced
2limes
juiced
1 Tbspwhite vinegar
salt
to taste
black pepper
to taste
frying oil

Instructions
Marinade Pork
Step 1
In large bowl, combine and mix pork, onion, shallots, garlic, bell pepper, scotch bonnet, scallions, thyme, parsley, orange juice, lime juice, vinegar, salt, and pepper
Step 2
Marinade at least 4 hours. Preferably overnight
Prepare Pork
Step 3
After marinade complete, place mixture in deep pot and cover with water. Bring to boil for 1-2 hours
Step 4
Remove pork from liquid onto separate plate of sheet pan. Pat dry with paper towels
Step 5
In separate deep pot, preheat frying oil to 350F. Deep fry pork till golden brown
