Double Crunch Peppermint Bark

Who doesn't love the union of peppermint and chocolate?! Peppermint bark is one of my favorite holiday treats. This is my version of peppermint bark with an added crunch by way of the Rice Krispy cereal. I also used a "Lego" candy mold as well as a holiday ice tray from the Dollar Tree to give the bark a festive flair.

Instructions

Step 1
Melt both chocolates over a double boiler. Make sure not to get any water in your chocolate. The water in the pot should be at a gentle simmer. This will take about 10 minutes.
Step 2
Stir in 1.5 Teaspoons of Peppermint Extract to each bowl of chocolate (3 Tsp Total) when the chocolate is fully melted.
Step 3
Turn off the heat but keep the chocolate above the simmering pot. Split the dark chocolate into bowls if you're going to make the double crunch bark. To one bowl had rice cereal.
Step 4
Stir in crushed candy canes into the white chocolate. If you're using a candy mold pour in some of the crushed peppermint candies or candy canes first followed by the white chocolate with crushed candy. Make sure to go in with a cake tester or knife to release any bubbles. Let the white chocolate sit in the freezer for 5-8 minutes or until the top layer is set. Next pour in your dark chocolate with the rice cereal and let this sit at room temperature for about 10 minutes or until completely set. This can be also be put in the refrigerator or freezer to speed up the process.
Step 5
If you're creating a regular bark, pour the dark chocolate in a square or rectangle pan or mold lined with parchment paper and let the chocolate set before adding the white chocolate layer topped with more crushed peppermint candies/ candy canes. Enjoy.
