"Secret Ingredient" Chocolate Mini-muffins

I had two bananas on the counter that were ready to go but was missing other ingredients for banana bread.. I made these instead.
400 degree oven, bake 20 minutes
Mini muffin pan
Dry ingredients:
1-1/2 cup AP flour • 1 pack instant chocolate pudding mix • 1/4 cup white sugar • 2-1/2 tsp baking powder • 1/2 tsp salt
Wet ingredients:
2 eggs • 2 ripe bananas, mashed • 1/2 cup milk • 1 tsp vanilla extract • 1/4 cup melted butter
I browned my butter because I wanted to. You don't have to unless you know how. It's not necessary.
In a big bowl, whisk all dry together. In a medium bowl, mix the wet ingredients until they are blended well. Combine wet to dry, don't overmix. Portion into a mini muffin pan. It'll make about 36 or so. Regular size muffins will make 12-16 but I don't have a regular muffin tray anymore and I can only guess the baking time would increase by about 5-7 minutes. Total bake time is 40 minutes unless you have two muffin trays.
They're light and fluffy and the banana and chocolate are well balanced.
Usually I don't like that combination but it was good here. I'd make them again.
