sweet potato chickpea nuggets

chicken nuggets are just the best childhood food, so i made some sweet potato chickpea nuggets!! these are sooo tasty🤩 Ingredients: 2 medium sweet potatoes 1 can chickpeas, drained ¼ c. + 2 tbsp vital wheat gluten 1/2 tsp garlic powder 1/2 tsp onion powder ½ tsp paprika ¼ tsp poultry seasoning ½ c. breadcrumbs + garlic salt 1. Cook sweet potatoes and add to a food processor and blend until smooth 2. Add in the can of chickpeas and pulse until smooth 3. Add this mixture to a bowl with the rest of the ingredients and knead for about 30 seconds until the dough all comes together (if you’re dough seems super wet you may need to add more wheat gluten- I would recommend one tablespoon at a time) 4. This is optional but recommended: let the dough sit for 30minutes to an hour to allow the gluten to fully form 5. Form the dough into little nuggets. I used a cookie scoop to get them to all be the same size. 6. Combine the breadcrumbs and some garlic salt on a large plate and dip each nugget into this mixture until fully coated 7. Bake in the oven at 350 for 20-25 minutes: 10-12 minutes each side until golden or air fry at 360 for about 15 minutes, flipping halfway.
