Instructions
Step 1
Wash barley in several changes of water. Put barley and pandan leaves in water and bring to a boil.

Step 2
Once it starts to boil, remove the bubbles that surface. Keep boiling over medium low heat until the water is clear. Continue to boil for another 10-15 minutes.
Step 3
Add candied melon and simmer for 10-15 minutes.

Allow the barley drink to stand for 15-20 minutes until it has cooled down slightly.
Step 5
Do not strain the drink. If you prefer a little sweeter, add sugar to taste. Even without sugar, the candied melon would have sweetened the drink. Serve warm.
Step 6
It is best to drink it on the same day you cook it. If you keep it in the fridge, finish it within 1-2 days.
