Mulled cider made from fruit peelings, Zero waste!

I love serving mulled cider and fruit peelings in a tea set, its such fun on a winters afternoon. Utilizing every part of flavorsome fruits like apples, grapefruits, lemons, pears and oranges, adding that the best thing to do is "keep all your peelings".
Whether it be a half-grated orange or wrapped-up lemon, as long as there is no mould, "it can all go in".

Step 1
Start by bringing the sugar and water to a boil in a large saucepan to form a golden caramel

Add in the spices and citrus peel, including ginger and even apple cores for "a little extra fruitiness"

Add half of the cider onto the caramel mixture and simmer gently for 10 minutes

The secret is to add the rest of cider just before serving, bring it up to temperature.

For an extra kick, add a dash of brandy or vodka, grate in some orange, lemon or grapefruit zest and add a few berries, cinnamon sticks or even raisins and nuts to the mixture.

Strain through a sieve.
