Step 1
Preheat oven to 350°

For the roasted tomato ornaments, place your cherry tomatoes in a baking dish or a pan and add olive oil and balsamic vinegar. I do 1 tbsp of each for 1.5 pounds of cherry tomatoes. Put them in the oven to bake for 25-30 minutes.
Step 3
Cut one of your puff pastry sheets into the shape of a Christmas tree. Then, use this as a stencil for the second sheet. Save your scraps to make stars or ornaments!
Step 4
Mix your chicken with pesto so that it's evenly combined, and leave at least 1 tbsp pesto to the side. Put your shredded chicken straight down the center of the tree, so that it acts as your "tree trunk". Add pesto without chicken on the edges where the leaves of the tree would be. See the picture below.
Step 5
Add the second puff pastry tree on top of it, and use your fingers to seal it shut.
Step 6
Using a sharp knife, cut horizontal slits from the edge of the tree, to the "tree trunk". Each slit should be around 1/2-1 inch thick. Then twist the slit to create the leaves of the tree. Picture below.
Step 7
Next, you're going to whisk an egg and brush a light layer across the top of the tree. Then brush some pesto on top of that, so that it comes out of the oven green like a Christmas tree.
Step 8
Bake for 20 minutes.
Step 9
Add roasted tomatoes and feta on top, decorated like ornaments!
