Step 1
preheat the oven to 200°c and set out: a baking tray, frying pan and cutting board with a sharp knife and plenty of room to package up chicken.

rub chicken breasts in oil and slice open lengthways, fill each with 100g cheese mix, salt&pepper and thyme
Step 3
close up the chicken breasts and carefully wrap in 3 slices of prosciutto (+1 or 2 around the length, not width, to keep the cheese in). the best technique is to lay three slices down parallel on the board, overlapping, and roll the chicken breast across it. don't make it loose, you'll regret it

place the chicken breasts on a baking tray, drizzle with olive oil and sprinkle crushed garlic, salt&pepper and thyme: bake for 30 mins

when there are 5-10 mins left of baking time, heat the frying pan and add olive oil, crush the garlic and add to the pan with salt, pepper and thyme (or, simply microwave a small bowl of oil, garlic and herbs for 1 min)

when fully cooked, take out the chicken and plate it, drizzle the hot garlic oil over the chicken
