Instructions

Step 1
Sauté the onion and garlic in olive oil, 5 min, until softened and fragrant. Add the chicken sausage, increase the heat and sear until browned, about 5 min. Remove from pan.
Step 2
Add the butter and cook pineapple until well caramelized, scraping up the brown bits from the pan. Add the peppers, and continue to cook until peppers are crisp but tender, about 3 mjn. Add the chicken sausage/onion, rice and green onions and toss everything to combine well. Drizzle with creamy chipotle sauce and DIG IN!
