Step 1
1. Preheat the oven to 400˚F.
Step 2
2. Drizzle 1 tablespoon of oil onto a parchment lined baking sheet in six different spots, equally spread apart and top each tablespoon of oil with 1 teaspoon of balsamic vinegar.

3. Top mixture with a couple thin slices of apple (or one slice of apple if the apple used is bigger).

4. Top apple slices with a slice of onion, and sprinkle with 1 tablespoon cheese.
Step 5
5. Top each stack with a sheet of puff pastry, pricking the tops of each with a fork.
Step 6
6. Bake for 22 to 25 minutes or until browned and puffed.
Step 7
7. Remove from oven and cool for a couple minutes.
Step 8
8. Carefully flip each over with a spatula and sprinkle with sea salt, pepper and fresh thyme leaves. Serve.
