This is more of an outline than an actual recipe. There was an actual recipe at one time, I'm sure, but over the years I've learned to improvise and use my judgment.

Instructions

Step 1
Peel and cut potatoes into bite sized pieces. Larger pieces will take longer to cook but smaller pieces are more likely to be all crunch and no fluffy middle.
Step 2
Add butter and oil to pan heated up on medium heat. I usually use 2 tablespoons of each. As long as it's enough to coat the pot sties you chopped up your set. I prefer cast iron. I usually use a 10" pan but have used a 8" and 12" pans deoending how many I'm feeding
Step 3
Drain and dry potatoes and add to the pan. Add salt and pepper.
Step 4
Cover and cook for 15 minutes on medium heat.
Step 5
Uncover and continue to cook until potatoes and cooked through and brown and crispy on the outside. Stir and flip during cooking for even browning.
Step 6
Once cooked to desired level remove from pan and serve.
Step 7
Options: sprinkle grated parm on top and broil til melted. Make it extra cheesy with any cheese you like. Add pizza sauce for pizza fries. Sprinkle with fresh parsley as garnish.
