Instructions

Step 1
Melt the butter in a frying pan over medium-low heat.
Step 2
Add the shallots and garlic and cook until soft and fragrant, but not too brown.
Step 3
Remove from heat and transfer to a food processor along with all the remaining ingredients except the canola oil.
Step 4
Pulse several times until no large chunks of crabmeat remain.
Step 5
Scoop out a small handful of the mixture and form into a flat patty; if the mix doesn't hold together well, add more cream or flour as needed.
Step 6
Heat a thin layer of oil in a frying pan and gently lower several of the crab cakes in.
Step 7
Cook for about 3 minutes, or until the crab cakes are a nice golden color, then flip and cook for another three minutes on the other side.
Step 8
Repeat with the remaining crab cakes.
Step 9
Serve with citrus slices.
