Sugar Free Strawberry Jam

2 lbs of strawberries will result in the 3 cups needed for this recipe. Adjust sweetener to taste (I used only half of what it calls for). Recipe will yield about 2 pints of jam.

Strawberries- 3 cups, already hulled and mashed.

Water- ¾ cup
¾ cupWater
1.75 ounceNo Added Sugar Pectin
Please make sure that your pectin is suitable for making sugar free jam for best results
½ cupGranular Sucralose
Splenda

Instructions

Step 1
Please prepare your glass jars as indicated by the manufacturer.
Step 2
Prepare your strawberries by removing the stems and then crushing them. (Or puree in a blender or food processor)
Step 3
Use a large stockpot. Combine together the strawberries, pectin, and water. Stir the ingredients in order to dissolve the pectin and then allow the ingredients to sit for ten minutes.
Step 4
Place this stockpot on the stove and bring it to a boil, stirring constantly. Once it boils for about a minute, you can carefully remove the stockpot from the stove and stir in the sucralose. Skim off any foam as needed.
Step 5
Transfer the mixture to your prepared canning jars leaving between ½-1/4" of room at the top. Then wipe down the rims of the jars to remove water or jam that may be on them.
Step 6
Securely seal the jars, as indicated by the manufacturer. Make sure that the bands are tight for boiling.
Step 7
You can continue making this by using a canner and following instructions. Or you can use a large stockpot and a canner rack and boil your jars for ten minutes. Allow your jars to cool completely as they will be hot.
